Friday Feast!

Last night we had an awesome meal!

Here is how it went:

Roasted Squash and Parsnip

1. Pre-heat oven to 400

2. Peel and chop parsnip and  butternut squash (For the squash I prefer to leave the skin on but this is personal preference)

3. Toss in olive oil and salt & pepper

4. Roast for 20-25 minutes

5. Sprinkle with parmesan and broil until golden

Quickly before we start on this one can anyone explain how a steak can be from the USA, Canada and Mexico? That is one well-travelled cow!

Seared & Lightly Seasoned Steak 

1.  Season both sides of your steak with HY’S seasoning

2. Place on grill for 3-6 minutes on each side for medium or however long you may desire

3. Top with sautéed mushrooms and gravy

Last but not least, do not forget your greens!

1. Steam broccolini

2. Top with béarnaise (I cheated a bit with thins one and used Knorr béarnaise sauce mix)

P.S If you have never had béarnaise, you need too! Man oh man is it good!

The roumors are true, I am having an affair..

I figure that it is important to be true to my readers so here it goes.

For the past 2 weeks I have been having an affair.. His name is Cheazday and we have been seeing each other for the past two Saturdays.. While I must say the time I do spend with him is very enjoyable I am rotting with guilt by the end of the night. Most times we go out as we wouldn’t want any evidence from our rendezvous to be found.. He is what I long for all week, the key to my successes and believe me he is handsome..

Okay, Okay.. You know me better than that.. I am talking about my CHEAT DAY!!! This Saturday it went a bit like this:

9:00am Breakfast  was Dim Sum with Daddy-o and it was delicious!!!

11:00am FroYo at Menchies Frozen Yogurt with yummy toppings

12:00pm Snack Party mix

5:00pm Burger and Yam fries at Sunset Burgers

8:00pm Toasted waffles and Peanut Butter Cup Ice Cream

 

It all seemed like a great idea until after.. I felt tired, full and lethargic.. Not to mention, I think my taste buds have gotten over it. The food I used to love is now okay and the thought of anything deep-fried repulses me..

I enjoy coming up with new ideas and being in the kitchen and that being said, I think we will skip out cheat days for the next two weeks. Look forward to new recipes soon!

Breakfast of Champions! No, Really!

I have always had a tough time perfecting an omelette but I am proud to say that I finally got it today! It was perfectly cooked, full of flavor and in accordance with my 4-hour Body Diet.

Here is how:

I started by sauteing some bacon and onion in a pan and preheating my broiler. After my bacon was browned and my onions were caramalized I transferred them to a bowl. I quickly washed out the pan and put it back on the stove on medium heat and sprayed it with PAM. I gave my eggs a really  good shake (Nulaid Reddi Egg)  and poured them into my pan.  About 1 minute after I added my sautéed ingredients to the egg mixture along with a little bit of cheese*. I popped the oven safe pan under the broiler for 2 minutes to refrain from having  raw omelette. With a pot holder I pulled out my pan and loosened up the edges of my omelette with a spatula and tilted it out on to my plate with a bit of a flip to get the perfect fold. I served it with a dash of fresh parsley, half an avocado and 1 small sliced tomato. YUM!

Finally success!!

*Cheat alert-I am not supposed to be having cheese at the moment but couldn’t resist a teeny tiny bit.

Bacon Wrapped Pork Chops and Braised Lentils

Let’s begin with YUM!!!

I was going to have a thoughtless Thursday but once I got into the kitchen my creative juices started flowing so here it is!

I started out by pre-heating my oven to 400.

Took my pork chops out and coated them in some garlic & parsley flavored mustard and wrapped them both with two strips of applewood smoked bacon.

My pork chops were quite thick so I cooked them for 35 mins and set my oven to broil at 500 for the last 3 or 4.

Braised Lentils

Step one-I started off by cooking the below in 2 cups of water or so that there was approx. 1 inch of water above the lentils:

1 cup dried lentils, rinsed and drained

1/2 a small onion

1 stalk of celery

1 carrot

2 bay leaves

Once the lentils have stared to boil turn your heat down to a simmer and leave uncovered until lentils are cooked and most of the water has evaporated, 20-25 mins.

Step two-Braise baby braise!

4 slices applewood smoked bacon

1/4 cup finely diced carrots

1/3 cup finely diced leek

1/3 cup finely diced onion

1/3 cup finely diced celery

1 or 2 cloves minced garlic

1/4 cup white wine

1 cup chicken stock

minced parsley

Heat a dash of olive oil in a dutch oven or heavy pot.  Cook Bacon until slightly crispy and add all veggies until they start to caramelize. Add wine to de-glaze pan scraping any crispy bacon bits from the bottom of the pot. Add in chicken stock and lentil mixture from step one, discarding the bay leaves as you see them. Bring the pot to a boil and reduce to a simmer until the mixture becomes thick and saucy. Garnish with Parsley and serve!
